Tampa’s multi-concept eatery Willa’s is adding yet another facet to its offerings.
Willa’s Provisions, the all-day café located in the same 4,700-square foot warehouse as the North Hyde Park neighborhood restaurant and bar Willa’s, will begin nighttime cocktail service Wednesday through Sunday. The expanding operation is part of the overall vision of Tampa-native restaurateurs Merrin Jenkins and Nate Seigel.
The new cocktail menu will focus primarily on amaro, a classic liqueur originally developed in Italy but not to be confused with amaretto (an almond-flavored liqueur) or amarone (an Italian red wine). Amaro has bittersweet flavor derived from aromatic herbal ingredients, and is commonly consumed neat or with a citrus garnish as an after-dinner digestif.
“I love low-ABV [alcohol by volume] cocktails that are meant to be sipped and savored,” says Willa’s bartender Amber Carregal in a news release.
Other offerings will utilize vermouth, the classic fortified wine apertif, and various negronis will highlight a unique selection of gins.
“Our cocktail menu at Willa’s Provisions is taking a page from aperitivo culture in Italy and beyond with appetite-stimulating aromatized wines and classic liqueurs,” adds Carregal. “Spritzes, amaro and negronis galore!”
Saturday and Sunday will offer their own unique brunch cocktail offerings, called “Weekenders” — including Pimm’s Cup, mimosas and mini Marys.
As part of the expansion, Willa’s Provision will also add more beer and wine to its all-day menu.
“The menu has special drinks that may be new for a lot of people, but we make them super approachable with soda, cola, housemade tonic or sparkling wine,” says Siegel. “We’ve strived to create a space that’s both intimate and comfortable, with cocktails and food that match the vibe.”
A new selection of bar snacks will complement the cocktail menu. Offerings include toasted almonds, castelvetrano olives, housemade pickles and specialty cheeses.
Willa’s Provisions will maintain its 8 a.m. to 2 p.m. operating hours on Mondays and Tuesdays, while expanding to remain open until 10 p.m. Wednesday through Sunday.
