
Strawberry Starfruit Salsa

Course Appetizer
Ingredients
- Juice and zest of 1 lime
- 1 tablespoon honey
- ⅓ cup finely diced red onion
- 3 starfruit, seeds removed, diced (plus a few slices for garnish)*
- 1 pint strawberries, hulled and diced
- 1 jalapeño, finely diced
- 1 handful chopped cilantro basil, and/or mint
- Salt and pepper, to taste
Instructions
- Whisk lime juice, zest, and honey in a small bowl. Add the red onion. Cover and allow it to sit at room temperature for about 30 minutes.
- Combine the starfruit, strawberries, and jalapeño in a medium bowl. Stir in the red onion and lime juice mixture. Fold in the fresh herbs. Season to taste with salt and pepper.
- Decorate with a few slices of starfruit.
- Serve with chips or tacos.
Notes
*If you slice them lengthwise, it’s much easier to remove the line of pulp containing the seeds in the center.
